Hearty Beef Chili

Ingredients
- 1 tbsp vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 500 g ground beef
- 2 tbsp chili powder
- 1 tsp cumin
- 400 g canned diced tomatoes
- 400 g kidney beans, drained and rinsed
- 250 ml beef stock
- Salt and pepper to taste
- Optional: sour cream, cilantro, lime

Even better the next day. Freezes well.
Instructions

Heat the oil in a large pot over medium-high heat. Cook the onion until soft, then add the garlic and cook for 1 minute.

Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

Stir in the chili powder and cumin. Add the tomatoes, beans, and stock. Bring to a simmer.

Reduce heat and simmer uncovered for 30–45 minutes, stirring occasionally, until thickened. Season with salt and pepper.

Serve with sour cream, cilantro, and lime wedges if you like.
