Hearty Beef Chili

Ingredients

  • 1 tbsp vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 500 g ground beef
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 400 g canned diced tomatoes
  • 400 g kidney beans, drained and rinsed
  • 250 ml beef stock
  • Salt and pepper to taste
  • Optional: sour cream, cilantro, lime

Notes

Even better the next day. Freezes well.

Instructions

  1. Heat the oil in a large pot over medium-high heat. Cook the onion until soft, then add the garlic and cook for 1 minute.

  2. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.

  3. Stir in the chili powder and cumin. Add the tomatoes, beans, and stock. Bring to a simmer.

  4. Reduce heat and simmer uncovered for 30–45 minutes, stirring occasionally, until thickened. Season with salt and pepper.

  5. Serve with sour cream, cilantro, and lime wedges if you like.
