Classic Chocolate Chip Cookies

Ingredients

  • 225 g butter, softened
  • 200 g light brown sugar
  • 100 g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 350 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 300 g chocolate chips

Notes

For chewier cookies, use more brown sugar and slightly underbake.

Instructions

  1. Preheat the oven to 190°C (170°C fan). Line baking sheets with parchment.

  2. Beat the butter and both sugars until fluffy. Beat in the eggs one at a time, then the vanilla.

  3. In another bowl, mix the flour, bicarbonate of soda, and salt. Stir into the butter mixture until just combined, then fold in the chocolate chips.

  4. Drop rounded tablespoons of dough onto the sheets, spacing them well apart. Bake for 10–12 minutes until golden at the edges but still soft in the middle.

  5. Leave on the sheet for 2 minutes, then transfer to a wire rack to cool.
